In the next 8 weeks we will be learning some of my favorite international recipes. The focus on this course will be the healing power of spices and how to use and integrate them into various dishes. We will be virtually visiting the eastern hemisphere (half of the Earth east of the Prime Meridian (0° longitude) and west of the 180° longitude line). If you have a globe, be sure to check it out so you can trace our culinary route! You can also use google earth.
Although we will be making many recipes together that have a long cultural tradition of being meat-based, I have also included vegetarian, vegan, and gluten free options for each class.
You’ll get a chance to explore the world through cooking while having fun in the kitchen. Not only will you pick up cool new skills like making noodles, blending spices, and sprouting beans, but you’ll also discover how to make food that’s both delicious and good for you. With simple instructions and flexible recipes, you can cook with confidence and even put your own twist on the dishes.
By the end, you’ll have a set of new cooking skills, some great recipes, and a better understanding of how spices can transform any meal!
The journey begins with classic Portuguese dishes like seafood rice (Arroz de Marisco) and creamy custard tarts (Pastel de Nata).
Participants will learn to use spices like bay leaves, coriander, and cinnamon to bring out incredible flavors.
Bonus: A flavorful codfish dish, Bacalhau à Brás, will also be on the menu.
Next, we’ll explore the bold and aromatic flavors of Morocco with lentil soup (Harira) and stuffed flatbreads (Msemen).
Paprika, cumin, and cilantro will take center stage as we create these dishes. Bonus recipes include refreshing mint tea and Chermoula, a tangy cilantro dipping sauce.
This week features Turkish favorites like kabobs, hummus, and a fresh Turkish salad.
Warm spices such as cardamom, cloves, and nutmeg will be highlighted. For a sweet treat, participants will learn to make homemade Baklava.
The flavors of India will come to life with dishes like Chana Masala and spiced Jaipur vegetables.
There will be an opportunity to blend garam masala and curry powder from scratch, adding a personal touch to the recipes.
Bonus dishes include creamy red lentil curry and cucumber raita.
Thai cuisine takes the spotlight with recipes for Pad Thai, green curry, and stuffed Thai omelets (Kai Yad Sai).
The focus will be on balancing sweet, salty, sour, and spicy flavors using ingredients like ginger and pandan. As a bonus, we’ll make a colorful Thai layer cake!
This week is all about light and fresh Vietnamese dishes, including crispy noodle cakes (Bun Gao Xao Tom), translucent spring rolls (Goi Cuon), and creamy peanut sauce (Sot Lac).
The vibrant flavors of lemongrass and chili will be highlighted. Bonus: Salty peanut and sesame cookies will also be on the menu.
Chinese favorites like sticky shiitake rice, garlic eggplant, and egg foo young will take center stage.
Participants will also learn how to sprout mung beans and work with bold flavors like garlic and Chinese five-spice.
The final week focuses on creating homemade ramen from scratch. Fresh noodles, rich bone broth (or a vegan version), and a variety of toppings will complete the experience.
Medicinal mushrooms and seaweed will be the stars of this comforting dish.

We recommend our courses for kids from 8-18 years old. The skills we are teaching apply to kids of any age. The main criteria is their attention span is sufficient and being able to work with an ipad or smartphone.
2 hours of instruction per week. Carving out a small amount of time for daily practice in the kitchen is highly recommended.
We'll provide you with journal pages, handy reference sheets, and recipes that you can print-out and put into a binder.
